For all of you who I have mentioned this delicious treat to, I finally think I have perfected the recipe!! It is great dry, with milk, on ice cream, or with yogurt. If you try it, you will not be disappointed and if you are anything like me it will be made 1-2 times a week! We are addicted!
6 cups oats
2 cups oats (blended to flour consistency)
5 Tbs coconut (add more or less depending on your taste)
3 Tbs ground flax seed
1 cup wheat germ
(put these items together in a Large bowl and stir)
In a medium sauce pan heat the following ingredients on medium heat stirring constantly until boiling
1 1/2 sticks BUTTER
2/3 cup water
1 1/2 cup brown sugar
2 Tbs molasses
After this mixture is bubbling add
Pinch of salt
1 1/2 tsp vanilla
3/4 tsp cinnamon
You can also add any nuts or raisins that you desire. I usually add almonds.
Take hot mixture and pour over dry mixture and mix until all oats are wet. Dump out granola on two foil lined jelly roll pans. Organize the granola into an oval about 1/2 inch thick and bake at 300 degrees. Every 15 minutes take out and flip granola making sure to rotate the edges toward the middle. Try to be careful flipping to help maintain some nice clumps. Also alternate the pan position in the oven. Repeat flipping and alternating every 15 minutes for a total of 45 minutes. The last 15 minute cycle turn the oven off. Bake time is total of an hour. The granola will not be really crunchy when hot but as it cools it gets crunchy. The last 15 minutes watch it carefully as not to burn it.
Take out and let cool. Store in an air tight container and enjoy!

Hey, thinking about Bailey and Sicily playing together was bitter sweet... and a little tearful but I appreciate your comment. There are very few people who have any idea how painful this is and even fewer who understand WHY it is so painful. It sucks, but having kids sure makes up for it. Will you get a new dog do you think? Tyler says no way, I say wait until both of your boys want nothing else except a dog and beg us forever, then maybe. He still says, no way. LOL
